3/4 cup unsweetened shredded coconut
2 tbsp flax meal
1 tbsp maple syrup
2 tbsp protein powder
1/2 tsp vanilla
1 tbsp pumpkin pie spice
3/4 cup almond butter
1/2 tbsp coconut oil
Place all ingredients in a food processor and blitz until well combined. (Add a little extra coconut oil if very crumbly.) Place mixture in the fridge for 30 minutes.
Form batter into 1-inch balls. Store in sealed container in fridge.
I used my blender (instead of a food processor) and it worked fine.
