Club Sandwich

In the very rare occasion that we actually have any left over bacon I like to make club sandwiches. First, I make a mixture of mayo and dijon mustard.  I use about 1/2 c mayo/1 tbsp dijon mustard. I toast the bread. Then I spread some of the mayo mixture on the bread. Next I add turkey slices(with a sprinkle of salt and pepper), bacon, tomato slices, avocado slices, a slice of cheese and some lettuce. Yum!

Avocado Chicken Salad Sandwich

adapted from sixsistersstuff.com

Ingredients
1 shredded rotisserie chicken
2-3 avocados, chopped
1/2-1 bunch of cilantro, chopped
1/4 tsp garlic powder
1/4 tsp onion powder
salt & pepper to taste
6 ciabatta rolls, dinner rolls or hamburger buns

Instructions
Stir the chicken, avocado, cilantro and seasonings in a bowl. Taste the mix. Add a little more seasoning, if desired.
Serve on rolls or buns.

In this picture I grilled chicken and then chopped it. Although the rotisserie chicken would have been easier, the grilled method was tasty too.

This would be a good sandwich for a St. Patrick's Day lunch since it's green!

Teriyaki Chicken Salad Sandwiches

adapted from ourbestbites.com

2 chicken breasts
Soy Vay Veri Veri Teriyaki Marinade and Sauce
2 stalks celery, finely chopped
1/3 C sliced green onions, chopped
1/4 c. sliced almonds, toasted
1 mango, cut into small cubes (or 1 small can of Mandarin oranges, drained)
1 small can pineapple tidbits OR roughly-chopped chunks
1/3-1/2 c. light mayonnaise
Salt and pepper to taste
Croissants or pitas
Lettuce leaves
Cut chicken breasts into small pieces.  Cook in  a non-stick skillet.  When chicken is almost done cooking add 1/2-1 cup of teriyaki sauce.  Stir and cook for a few more minutes.  Remove chicken from pan and set aside.  While chicken is cooking, combine celery and green onions in a small mixing bowl or a plastic storage container with a lid.  Toss chicken with celery and onions and then add mayonnaise and mix thoroughly. Start with 1/3 c. and go from there. Add 1 (or more) tablespoons of Teriyaki sauce to taste. Refrigerate for several hours.
Right before serving, add mango, pineapple, and nuts. Season with salt and pepper to taste. You may need to add more mayo and/or Teriyaki–if you need it, go for it! Serve on a lettuce leaf in a croissant or a pita (or by itself if you feel the urge!)
I forgot to buy the mango when I was at the store.  Then I remembered that I had some canned mangoes in my food storage.  That worked!  I really like the flavor of this meal.  And anything with a croissant feels like a treat to me!

Slow Cooker Turkey Dinner

Turkey, stuffing, corn and strawberry spinach salad

Slow Cooker Turkey
1 turkey breast
1 envelope Lipton Onion Soup mix
1/2 c chicken broth

Rinse turkey breast and pat dry.  Rub soup mix all over turkey.  Pour chicken broth into slow cooker.  Place turkey breast in slow cooker.  Cook on low all day.  I did mine on high two hours and then low for five.  The meat fell off the bone.  You will have enough liquid to make gravy, I didn't have time so I don't have a recipe here for that.

Stuffing was from Stove Top (remember-four boys-it has to be fast!)

I heated up frozen corn and seasoned with salt and pepper.

Strawberry Spinach Salad
spinach
strawberries
poppyseed dressing
sliced almonds (optional)

Put spinach in a big bowl.  Mix dressing into leaves.  Top with strawberry slices and almonds.

One way I used the left over turkey for lunch was a:
Turkey Bacon Avocado Sandwich
Chop the turkey, an avocado, tomatoes and toss in a bowl.  Add real bacon bits and ranch dressing.  Mix.  Put on a whole wheat sandwich thin that has a leaf of lettuce on each side (so the bread doesn't get mushy, especially if you're packing this before you head out to work).  Yum!
