Veggie Combo Pizza

This is my favorite pizza. But I'm the only one in the family who will put this many veggies on a pizza so I understand if you think I'm crazy. But you won't be sorry if you get brave enough to jump out of the pepperoni box and try this! It's delicious!

I started with a store bought thin pizza crust. I added a little spaghetti sauce to that. Then I added a thin layer of mozzarella cheese. After that I had a great time adding everything on the right! Okay, not all of that! That wouldn't fit on one pizza! I had ham slices, broccoli cut into small pieces, orange and yellow peppers chopped, chopped red onion, zucchini (which I actually chopped smaller after I took the picture) and pineapple tidbits. I covered these toppings with more mozzarella cheese. I put my fabulous pizza into a preheated oven at 425 degrees for about 8 minutes or until the cheese looked melted and a little browned.

I could probably eat this every day!

BBQ Chicken Pizza

1 pre-made pizza crust (or make your own!)
your favorite BBQ sauce
1 chicken breast cooked and chopped
1/4 c red onion, chopped
mozzarella cheese, shredded
fresh cilantro, chopped
pineapple tidbits

Place crust on a cookie sheet.  Preheat oven to 375 degrees.  Spread BBQ sauce on pizza crust.  Top with chicken, onions, pineapple, cheese and cilantro.  Bake in oven for 10-12 minutes or until cheese is bubbly.

I'm the only one who ate this so I give it 4 stars.

Kalua Pork Pizza

this is a mix of two recipes with my own twist:  ourbestbites.com Kalua Pork and Michelle Tam's Slow Cooker Kalua Pork

Kalua Pork:

3 bacon slices
about 3 lb pork sirloin tip roast
about 1 tbsp coarse red Hawaiian Sea Salt (or another type of sea salt if you can't find that)
Hickory flavored liquid smoke

Rinse the pork roast and pat it dry. Pierce the entire roast with a fork. Sprinkle generously with the liquid smoke (about 1 tablespoon, more if you have a very large roast) and sprinkle with the sea salt (start with about a little less than tablespoon and see how far it gets you; you can always add more after it cooks).   Rub the salt into the roast.  Place the bacon slices on the bottom of the slow cooker.  Place the roast in the slow cooker and cook on low for 8-10 hours or until the meat shreds easily with a fork.
Remove the roast from the pan and place it in a serving dish or on a serving platter. Shred the pork.  Drizzle enough of the cooking liquid over the pork to re-moisten it and keep it from drying out.
Pizza:

pizza crust
sauce
pineapple tidbits
any peppers, red onions or other toppings you like
mozzarella cheese

Preheat oven to 350 degrees.  Make a pizza dough or buy a pizza crust.  Place crust on cookie sheet (or you could put this on the grill once it's all assembled).  Put pizza sauce or spaghetti sauce on the crust.  Add pork, pineapple and other toppings.  Top with cheese.  Place in oven for about 8 minutes or until the cheese is melted.

I'm not sure I can express how much I liked this pork!  I practically ate the entire pork on my own!  This is great in the pizza (I added chopped red onions and orange and yellow peppers to mine) but is also great for salads, on rice or just plain.  It's soooo tasty!  Try it.  You won't regret it!

Husband wasn't home so my rating is 5 stars

Pulled Pork Pizza and Pepperoni Pizza

This wasn't what I was planning for Sunday dinner, but I had a terrible headache and decided we needed something quick and easy so I could sit down.  This was both and the boys loved helping make it and eating it!

Grilled Pulled Pork Pizza
from ourbestbites.com

Pizza Dough, either homemade or store-bought
vegetable or olive oil
Leftover BBQ Pulled Pork (see the pulled pork recipe on this blog from earlier in the week)
BBQ Sauce (Use the same one you used to cook your pork)
1 part smoked cheddar
2 parts Mozzarella cheese
thinly sliced red onion
diced pineapple, fresh or canned
chopped parsley or cilantro

I used store-bought pizza dough.  Following the directions on the container I prebaked the dough and then added the bbq sauce, cheeses, pork, onions and pineapple.  I topped it off with a little more mozzarella and tossed it back in the oven.  I used the oven because it was snowing and I didn't feel like grilling!  But that would be a great way to go too!  You could do individual pizzas that are smaller instead of the big ones I did on a cookie sheet.

We also had some pepperoni on hand and did the same thing but used a red sauce we had on hand, cheeses and the pepperoni.  Easy and fun!
